Garlic Scape Dressing, Two Ways

Two different versions of a delicious dressing featuring Garlic Scapes: the first is a vegan preparation, and the second includes cream.

Lemony Garlic Scape Dressing
 4 to 5 Garlic Scapes (if the outside skin is tough, give it a quick blanch)
 2 tbsp Apple Cider Vinegar
 1 tbsp Lemon Juice
 2 tsp Honey or Maple Syrup
 Salt & Pepper
 1/3 cup Sunflower Oil
Creamy Garlic Scape Dressing
 1 Garlic Scape
 2 tbsp Lemon Juice or Vinegar
 8 to 10 tbsp Olive or sunflower seed oil (or a combination of the two)
 Salt and pepper
 2 to 3 tbsp Cream or yogurt

Place all ingredients except oil into a food processor, and pulse until the it becomes a choppy paste. Turn the machine on to a low speed, and slowly drizzle in the oil till incorporated. Taste it-- if you can taste the vinegar too much, add more oil. If there is no bite left, adjust the salt and vinegar.

Chop the garlic scape into 1/2" pieces. Mash it in a mortar & pestle with the back of the knife to create a rough paste.

Place the mashed garlic scape in a bowl and add the vinegar. Whisk together with salt and pepper. Gradually whisk in the oil(s). Season with salt and pepper and taste. Adjust season and oil.

For the creamy part of the dressing, add 2-3 tablespoons of cream. Taste to adjust salt and pepper.
