1Using either a box grater or a food processor fitting with a shredding blade to shred zucchini and kohlrabi. Squeeze out water.
2Pulse white beans, eggs, minced garlic, salt and garlic powder in a food processor (you can also do this by hand with a potato masher.)
3Mix together all the shredded veggies, the beans-eggs-spices, and the bread crumbs in a large bowl. Form small balls, about the size of a golf ball, and then using either the palm of your hand or the bottom of a drinking glass, press into flat discs.
4Fry in some oil on the stove stop for a few minutes per side, then bake for 15 min at 350.
5Serve w spicy mayo! Mix mayonnaise with Sriracha, pepper butter or hot sauce.
