Braised Cabbage and Apples

 1 red cabbage (green works too), outer leaves and core removed, and sliced very thin
 1 medium onion, thinly sliced
 3 tablespoons fat or oil (duck fat or bacon grease are really delicious)
 1 tablespoon sherry vinegar
 1 bay leaf
 Kosher salt and pepper
 ½ cup water
 1 apple, peeled and grated

Melt the fat/oil and cook the onions over medium-low heat for 5 minutes. Then add the cabbage, vinegar, bay leaf, salt, pepper and water. Bring to a boil and then cover and reduce heat to simmer for 20 minutes. Add in apple, cover and cook 5 more minutes. Remove bay leaf, season to taste and enjoy warm!
