Parker’s Tomato Jam

This sweet and savory jam is a great addition to any sandwich or a great condiment for a cheese plate. Can be served warm or chilled.

 1 package frozen, diced tomatoes (thawed)
 2 tbsp sugar
 2 tbsp apple cider vinegar
 2 cloves minced garlic
 1 tsp dried basil or 3 tbsp chopped fresh basil
 1 tsp dried thyme

Combine all the ingredients–tomatoes with juices, minced garlic, sugar, vinegar, and spices–and cook over medium high heat.

Allow to cook for about a half hour– until most of the liquid has evaporated. Pass the mixture through a food mill to remove seeds and skin. Taste and add more sugar and vinegar as desired.

Return the mixture to the pan and simmer to reduce and create the consistency of a jam. Season with salt and pepper, and serve warm or chilled.
