Cool Cantaloupe Soup

This recipe comes courtesy of Marisa DiCenso-Pelser, raw foods chef and fitness professional behind RawTrainer and co-owner of PURE Health + Fitness in Strongsville. It's done in minutes, and perfect as a first course or a light lunch on a hot Summer day.

 1 large or 2 small cantaloupe
 1⁄4 cup lemon juice
 2 tbsp maple syrup
 1 small cucumber, peeled, de-seeded, and cubed
 Sea salt

Place cantaloupe, lemon juice, and maple syrup in a Vitamix or high speed blender and blend until smooth. Season the cucumber cubes lightly with salt. When you're ready to serve, pour the soup into chilled bowls and add cucumber to garnish.

    Great recipe!!! I didn’t have a cucumber so I improvised and added fresh blueberries as garnish with some crumbled feta chees and chopped basil! Delish!!!

    I love this recipe. I added fresh red and yellow pepper to garnish and topped with Greek yogurt (sometimes goat cheese) and citrus sea salt! Awesome!!!! It is so versatile!
