White Bean-Veggie Burgers

My toddler was a huge fan of these-- roll up some shredded veggies, beans, eggs and bread crumbs with some spices for a quick adult and kid-friendly dinner or appetizer!

 1 zucchini
 1 kohlrabi, outside layer peeled and discarded
 2 cups white beans
 2 eggs
 1 minced clove or scape of garlic
 1 tsp salt
 1/2 tsp garlic powder
 1 cup bread crumbs

Using either a box grater or a food processor fitting with a shredding blade to shred zucchini and kohlrabi. Squeeze out water.

Pulse white beans, eggs, minced garlic, salt and garlic powder in a food processor (you can also do this by hand with a potato masher.)

Mix together all the shredded veggies, the beans-eggs-spices, and the bread crumbs in a large bowl. Form small balls, about the size of a golf ball, and then using either the palm of your hand or the bottom of a drinking glass, press into flat discs.

Fry in some oil on the stove stop for a few minutes per side, then bake for 15 min at 350.

Serve w spicy mayo! Mix mayonnaise with Sriracha, pepper butter or hot sauce.
