Sauerkraut Pancakes

Thanks to Nancy Pashley for this delicious Sauerkraut Pancake recipe!

 1 egg
 1 cup flour
 0.50 cup sour cream
 0.50 cup yogurt
 1.50 sauerkraut, well-drained
 A few dashes of Hungarian paprika

Mix together the egg, flour, yogurt & sour cream in a bowl first, and then add the drained sauerkraut. Refrigerate it all for at least an hour and a half. Form little balls from the "dough" in your hand and flatten slightly to form pancakes. Fry in oil or butter in a deep-sided skillet, and serve with applesauce.
