Simply Green Salad with Pesto Dressing

Use basil or ramps to make a pesto, whip in some yogurt and voilĂ ! A perfectly simple & bright green Spring salad.

 1 Head spring lettuce, washed and torn into bite-sized pieces
 0.33 cup Pesto
 0.25 cup Velvet View yogurt
 Freshly squeezed lemon juice, to taste.

Mix the pesto and yogurt together in a small bowl using a fork. Taste, and add lemon juice to add some vibrancy or to thin it out.


Add a few dollops to washed and torn-up extremely fresh lettuce, and toss well. Serve with some extra pesto dressing on top.
