Kielbasa with Summer Vegetable Packets
Perfect for a late-summer cookout or out camping! Well, you don't have to make it over a campfire (grill and oven directions included) but these foil packets are stuffed with fresh veggies, sliced kielbasa and some herbs for a quick summer dinner. Best of all-- clean up is a cinch! Just make sure to use high-quality foil so your dinner steams up in the packet.
Turn your oven to 400 or your grill to medium high.
Slice kielbasa into thick coins, and chop vegetables into 1" pieces. Slice the corn cobs into coins or chunks of kernels. The onion into wedges. Add everything to a big bowl, pour over the oil and the spices and toss well.
Place 3/4-1 cup of sausage and veggies to the center of a piece of foil, about 10 x 12 inches.
Wrap into a tightly sealed packet, and then fold that packet inside another packet so that they don't leak.
Bake the foil packets in the oven or in the grill (covered) for 20-25 minutes. Unwrap one packet and test the zucchini to see if they're done, Serve warm.

This is so awesome!!! I didn’t have the corn but added peppers, onion and zucchini. I had a neighbor stop me to ask what I made the night before because it smelled so good!
Really excellent. I added a whole, peeled garlic to each packet (I ended up with three), tomatoes, and potatoes! I omitted the peppers and corn. Otherwise, I followed the recipe and had great results. A real keeper.
Really good! I’ve made it twice in a week — first for my in-laws (they wanted the recipe) and then a half recipe for just my husband and me. The flavor from the blend of herbs/spices is wonderful.
