Oven Fries with Pesto
Preheat your oven to 400 degrees.
Scrub your potatoes, and then slice into desired shape-- a wedge works best. If your potatoes are large, slice in half, place cut-side down on cutting board, and use an apple slicer for quick fries. Save the center "cored" portion for soups.
Toss them in a healthy amount of sunflower or another high smoke point oil (not olive.) Sprinkle with salt and pepper.
Roast for 35-40 minutes, tossing every 10 to make sure they don't stick to the pan.
Allow to cool slightly, but when still warm toss with the pesto. Start with less and add more as you go.
