Hi Jen– thanks for writing. The brine that the pork bellies are in have salt, sugar, and water. All brines for a cure have a sugar component – either honey or sugar – and in this case honey is too expensive.
The bacon itself does not have sugar on it. The brine is rinsed off and the bellies are allowed to dry in the cooler before being smoked.
