These Tex-Mex inspired stuffed Squash can be filled with whatever you have on hand: beans, corn, tomatoes, cheese, etc. Use meat in the first step, or skip entirely for a vegetarian version. For a garnish, add sour cream, minced candied jalapeños or chopped cilantro. This simple side dish can be put together in just a few minutes if you have some cooked beans and cooked squash-- Parker's best practice is to cook everything right away and have it ready to go in the fridge or freezer for a last minute meal! Serves 4. Gallo Pinto ("Painted Rooster" in Spanish) is the traditional Costa Rican breakfast.
