Apple Cake Muffins
Thanks to the Vaughns for this deliciously moist Apple Muffin Recipe they brought to the Customer BBQ!
Cream together the Sunflower Oil, 1 cup white sugar, 1 cup brown sugar, and the 2 eggs.
In a separate bowl, mix together the flour, flax seed, salt, nutmeg, baking soda & cinnamon. Then fold into the creamed mixture. The batter will be very thick.
Fold into the 3 cups chopped apples, and if using, ¼ cup chopped nuts, ¼ cup raisins, and/or ¼ cup chocolate chips. If using ground nuts, add them with the flours in step 2.
Bake in preheated 350 degree oven for 22-25 minutes (large muffins) or 18-20 minute (mini muffins).
