Collard Green Energy Wraps with Honey Mustard Dressing

For Dressing
1 cup olive oil
1/3 cup honey
1/4 cup mustard, coarse mixed with Dijon
1/4 cup apple cider vinegar
2 tbsp. lemon juice
1 clove garlic
For Wraps:
2 large collard leaves
4 tbsp any spread, dip, or paté (hummus, white bean spread, nut butters)
Handful of mixed greens or sprouts
1 carrot, julienned
1/2 cucumber, julienned
½ of a green onion, sliced thin
¼ cup bell pepper, julienned
1/2 avocado, sliced (optional)
Small handful of raisins or shredded apple (optional)

Lay the collard leaves flat with the inside facing up.

Place all the ingredients on one leaf and wrap tightly. You can add the dressing inside the wrap or dip each wrap into it.

Can also blanch collard green quickly and then cool in ice water for a more pliable wrap.
