Plum Jam
This is a delicious plum jam that's easy to make at home. Use the ingredients list as a ratio, multiplying up for more plums. Either pressure can, can in a water bath as directed, or keep in your fridge and use within 2 weeks. Freezes well, too (just make sure your container or jar is labeled as FREEZER-SAFE!)
Wash plums, then slice and remove pit.
Put in large pot (with skins still on.)
Gradually mix in salt and honey, and stir.
Let sit ~5-10 minutes
Turn heat on and bring to a boil while constantly stirring.
Bring to a simmer, still stirring.
Continue to simmer until it comes to a “jam-like consistency.”
Fill sanitized half-pint jars.
Clean rim of jar if any jam spilled (top and sides.)
Put lid on, and rotate ring ¾ turn.
Hot water bath for 15 minutes.
