Dill Pickles

This is the Dill Pickle recipe from the Canning Club meet ups 2014-- works great for green beans too!

Brine ingredients: (for 2 pints)
 1 cup cider vinegar
 1 cup water
 1 ½ tablespoons kosher salt
Pickle Ingredients:
 Cucumber spears, or whole kirby cucumbers
 2-3 garlic cloves (per jar)
 5 peppercorns (per jar)
 3-4 sprigs dill (per jar)

Bring brine to a rolling boil.

Wash cucumbers, and trim blossom end off and slice into spears.

Pack jar with pickles (as tight as you can without smashing cucumbers,) leaving about ½ headroom from pickle to top of jar.

Ladle brine (fill up to ½ inch headspace to top of jar.) Tap jar gently on counter to remove air bubbles

Clean rim of jar if needed (top and sides) and then put lid on. Rotate ring ¾ turn, and place in a hot water bath 15 minutes.
