A frittata is an open-faced egg dish that is finished in the oven-- sort of like a cross between a crustless quiche and an omelet. This recipe uses some frozen corn and ramps, but you can add minced bacon, asparagus, other cheeses, whatever you have on hand. A fancier version of breakfast-for-dinner.
The original inspiration for this recipe came from Beth D., who praised the easy prep and pizza flavor, as well as that it freezes really well. Up the savory flavor with some chopped olives, fresh basil, or even some cured meat for a delicious starter.
This delicious and creamy broccoli cheese soup is a classic with a twist-- it has apples in it to sweeten up the broccoli. This can also be prepared vegan by substituting the cheese for 3/4 cup cashews, soaked overnight and drained. Inspired in part by Cook's Illustrated Broccoli Cheese Soup and Blue Kale Road's Broccoli Apple Soup.
