Savory Kale Chips

Kale chips are a delicious way to use your greens and are a wonderful substitution for fried chips. They can be made in a dehydrator or in an an oven. Nutritional yeast is a savory seasoning that has a ton of vitamin B12, so it's a great source of an essential amino acid (especially for vegans, who otherwise wouldn't get it because it occurs naturally in animal products.) Adjust the seasoning to your preference, but this is a tasty blend!

 1 bunch kale, washed and torn to medium pieces
 1.5 tbsp sunflower oil (or melted coconut oil)
 2 tbsp nutritional yeast
 1/4-1/2 tsp salt
 1/4 tsp each: turmeric, cayenne, & chili powder

Turn the oven to 375. Remove the stems from the kale by tearing off the leaves in medium-small pieces. Wash and spin dry.

Get all your spices together in one small bowl and mix well.

Toss the kale in the oil and massage gently, so that all the leaves are well coated. Sprinkle the seasonings on the kale making sure they're evenly distributed.

Spread the kale pieces on baking sheets in a single layer (you'll need multiple sheets.)

Put the kale into the oven and set a timer for 6 minutes. Rotate the pans from front to back and switch sheets from top to bottom in the oven. Roast for an additional 5-6 minutes so well-crisped but not burnt. Allow to cool, and then enjoy!
