Winter Share 2011 – Week 4

Beef Roasts, Leaf Lettuce, Onions, Cauliflower, and More

 

I can’t believe it is already December.  Where has this year gone!

This week we continue to be blessed with unusually mild weather.  There, I said it.  Now we are doomed.  Anyhow, as it stands we continue to have outdoor produce, including cauliflower, broccoli, and bok choy.  We also have some tasty greenhouse products, including our colorful and tasty braising green mix (mustard greens, kale, and tatsoi) and leaf lettuce.

The center of this week’s bag is our grassfed beef roasts.  These roasts are approximately 3 lbs each and full of flavor.  They come from Red Angus and Scottish Highlander cattle (depending on farmer).  Most of this beef was raised in Chardon, the rest in Ashland.  These tasty roasts will go great in a slow cooker or braised slowly in your oven or dutch oven.

With the roasts we will be providing you some root vegetables to cook with the roast.  We’ll have a small roasting potatoes (red norland or yukon gold) and onions.

Here’s all of this week’s bag contents:

 

Winter CSA Wk 4:

1  bunch bok choy (approx 8 oz)

1 bunch leaf lettuce

1 bag mixed braising greens, approx 0.75 lb

3 count winter squash

2 lbs onions

1 head broccoli

1 head cauliflower

1/2 lb spinach or pak choy

1 bag corn chips

1 8-oz wedge of havarti or pepper havarti from Mayfield Road Creamery

3 lbs potatoes, yukon gold or red norland

Approx 3# beef roast (we’ll have an assortment available)
