Braised Red Cabbage with Cherries

This variation on our Slow-Cooker Red Cabbage recipe uses tart cherries for a Summer dish rather than tart apples in Fall.

 1 head red cabbage, cored, washed and roughly chopped
 1 pint cherries, washed and pitted
 1 thinly sliced medium onion (red or candy or a few bulbs of bunching onion)
 2 tbsp oil or rendered bacon fat
 2 tsp coriander seeds
 1/2 tsp ground ginger
 2 tbsp apple cider vinegar
 1 tbsp lemon juice
 1-2 tbsp honey
 1/2 tsp salt

Place all ingredients in that order into crockpot and set to high. Cook for 2 hours with top on, then stir and remove top for an additional 1.5-2 hours to allow some of the liquid to steam off.
